Ingredients

  • 1 lb Ground beef (80% lean)
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Almond flour
  • 1 Egg
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 Zucchini (large)
  • 2 tbsp Olive oil
  • 2 cups Low-carb marinara sauce
  • 2 tbsp Fresh basil (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, Parmesan cheese, almond flour, egg, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix until well incorporated.

Step 3

Form the meat mixture into 1-inch meatballs and place them onto the prepared baking sheet.

Step 4

Bake the meatballs in the oven for 18-20 minutes, or until they are browned and cooked through.

While the meatballs are baking, prepare the zucchini noodles. Use a spiralizer or julienne peeler to turn the zucchini into spaghetti-like strands.
