Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1.5 teaspoons Apple cider vinegar
  • 4 large Eggs
  • 0.5 cups Sourdough starter (low carb, gluten-free version made with almond flour)
  • 0.5 cups Warm water
  • 1 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it lightly with olive oil.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Stir well to combine the dry ingredients evenly.

Step 3

In a separate bowl, whisk together the eggs, apple cider vinegar, sourdough starter, warm water, and olive oil until fully mixed.

Step 4

Slowly add the wet mixture to the dry ingredients, stirring continuously. Mix until a dough forms. The dough will be slightly thick but sticky. Let it rest for 5-10 minutes to allow the psyllium husk powder to absorb moisture and firm up the dough.

Step 5

Transfer the dough to the prepared loaf pan. Smooth the top with a spatula or your hands dipped in water to prevent sticking.

Step 6

Using a sharp knife, score the top of the loaf with a shallow cut. This helps the bread rise evenly during baking.

Step 7

Place the loaf in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 8

Remove the loaf from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Step 9

Slice into 12 even pieces and store any leftovers in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
