Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, salt, xanthan gum, and granulated erythritol (if using).
In a separate bowl, whisk the eggs until slightly frothy. Add the almond milk, melted butter, and apple cider vinegar, and whisk to combine.
Gradually add the wet ingredients into the dry ingredients, stirring gently with a spatula until a sticky dough forms. Let the dough rest for 5 minutes to allow the flours to absorb the liquid and the xanthan gum to activate.
