  • 2 tablespoons coconut oil

  • 10 leaves curry leaves
  • 2 dry red chili
  • 1 medium onion
  • 1 inch piece ginger
  • 2 cloves garlic
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh coriander leaves

Directions

Step 1

Wash the snake gourd thoroughly. Peel the skin lightly and slice it into thin rings, removing the seeds if they are mature.

Step 2

Finely chop the onion, ginger, and garlic. Set aside.

Step 3

Heat coconut oil in a pan over medium heat. Add mustard seeds and allow them to splutter.

Add cumin seeds, curry leaves, and dry red chilies to the pan. Stir for a few seconds until aromatic.
