Ingredients

  • 1 pound Ground beef
  • 0.5 medium, chopped Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Cauliflower rice
  • 4 Low carb tortillas
  • 1 cup, shredded Cheddar cheese
  • 0.5 cup Sour cream
  • 1 cup Green enchilada sauce
  • 1 tablespoon Olive oil
  • 0.25 cup Chopped cilantro

Directions

Step 1

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, around 5 minutes.

Step 3

Add minced garlic to the skillet and sauté for another minute until fragrant.

Step 4

Add ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

Stir cumin, chili powder, salt, and black pepper into the beef mixture, ensuring it's evenly coated.

Add cauliflower rice to the skillet, mixing thoroughly. Cook for another 5 minutes or until the cauliflower is tender.
