Ingredients

  • 2 large aubergines (eggplants)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 tablespoons tahini
  • 1 teaspoon smoked paprika
  • 2 garlic cloves, minced
  • 0.5 teaspoon cumin powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped for garnish

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash the aubergines and poke several holes in them using a fork. This helps to release steam as they roast.

Step 3

Place the aubergines on a baking sheet and roast in the oven for about 30-35 minutes, or until the skins are charred and the flesh is completely soft.

Remove the aubergines from the oven and let them cool slightly. Once cooled enough to handle, peel off and discard the skins.
