Ingredients

  • 250 grams smoked salmon
  • 200 grams cream cheese
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh chives
  • 1 tablespoon lemon juice
  • 2 tablespoons capers
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium cucumber

Directions

Step 1

In a medium-sized bowl, mix together the cream cheese, finely chopped dill, and chives until well combined.

Step 2

Add the lemon juice, rinsed capers, salt, and black pepper to the cream cheese mixture. Stir until the mixture is smooth and evenly combined.

Step 3

Trim the ends off the cucumber, then slice it lengthwise into thin, ribbon-like strips using a mandoline or a vegetable peeler.

Step 4

Lay a piece of plastic wrap on a flat surface, and place the smoked salmon slices on it, slightly overlapping to form a rectangle.

Step 5

Spread the cream cheese mixture evenly over the entire surface of the salmon.

Step 6

Place a couple of cucumber ribbons across one end of the salmon base.

Step 7

Gently start rolling the salmon over the cucumber ribbons, using the plastic wrap to help keep it tight, until you form a log.

Step 8

Wrap the salmon roll tightly in plastic wrap and refrigerate it for about 30 minutes to allow it to set.

Step 9

Remove the roll from the refrigerator, unwrap it, and slice into 1-inch thick slices.

Step 10

Serve immediately as a light appetizer or refrigerate until ready to serve.
