Ingredients

  • 1 cup almond flour
  • 0.25 cup flaxseed meal
  • 0.5 cup cottage cheese
  • 0.25 cup spinach, finely chopped
  • 0.25 cup onion, finely chopped
  • 1 small green chili, finely chopped
  • 2 tablespoons coriander leaves, finely chopped
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon carom seeds
  • 0.5 teaspoon salt
  • 0.5 teaspoon red chili powder
  • 2 tablespoons ghee
  • 0.25 cup water

Directions

Step 1

In a large mixing bowl, combine the almond flour, flaxseed meal, and cottage cheese. Mix well to form a slightly crumbly mixture.

Step 2

Add the chopped spinach, onion, green chili, and coriander leaves to the flour mixture. Mix until the vegetables are evenly incorporated.

Step 3

Add cumin seeds, carom seeds, salt, and red chili powder to the bowl. Mix the spices thoroughly with the dough.

Gradually add water, a little at a time, and knead the mixture until it forms a soft dough. It should not be sticky.

Divide the dough into 4 equal portions. Roll each portion into a small ball and flatten it slightly.

Once both sides are cooked and golden brown, remove the koki from the pan. Repeat the process with the remaining dough portions.

Step 10
