Ingredients

  • 1 pound shrimp, peeled and deveined
  • 12 ounces Andouille sausage, sliced
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) tomatoes, diced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup okras, sliced
  • 0.25 cup scallions, sliced
  • 2 tablespoons parsley, chopped
  • 2 cups cauliflower rice

Directions

Step 1

In a large pot, heat olive oil over medium heat.

Step 2

Add the sliced Andouille sausage and cook until browned. Remove and set aside.

In the same pot, add the onion, green bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables are tender.

Stir in the minced garlic and cook for another minute.
