Ingredients

  • 2 pounds Beef chuck roast
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 2 large Onions
  • 1 cup Beef broth

Directions

Step 1

Start by patting the beef chuck roast dry with paper towels. Season generously with salt, black pepper, garlic powder, ground cumin, and paprika on all sides.

Step 2

In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until nicely browned, about 4-5 minutes per side. Once browned, remove the beef and set aside.

Step 3

Peel and slice the onions into thin rings. In the same pot, add a bit more olive oil if needed and sauté the onions over medium heat until they are soft and caramelized, about 10-12 minutes.

Step 4

Return the seared beef to the pot with the onions. Pour in the beef broth around the meat, not directly on top, to maintain the sear.

Step 5

Cover the pot with a lid and reduce the heat to low. Allow the beef to cook slowly for about 4 hours, or until the meat is tender and can be easily shredded with a fork.

Step 6

Once cooked, remove the meat from the pot and shred using two forks. Return the shredded meat to the pot and mix well with the onions and juices.

Step 7

Serve the shredded meat warm, garnished with fresh herbs if desired, and enjoy!
