Ingredients

  • 1 medium head green cabbage
  • 0.5 small head red cabbage
  • 1 large carrot
  • 4 stalks green onions
  • 0.25 cup fresh parsley
  • 0.5 cup almond slices
  • 0.25 cup olive oil
  • 2 tablespoons cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Thinly slice the green and red cabbage into fine shreds using a sharp knife or a mandolin slicer. Transfer the shredded cabbage to a large mixing bowl.

Step 2

Peel and grate the carrot with a box grater or use a julienne peeler. Add the grated carrot to the cabbage in the bowl.
