Ingredients

  • 1 cup Almond flour
  • 0.5 cup Sesame seeds
  • 0.25 cup Unsweetened shredded coconut
  • 0.25 cup Erythritol sweetener
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 cup Unsalted butter, melted
  • 0.5 teaspoon Vanilla extract
  • 1 large Egg

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, sesame seeds, shredded coconut, erythritol, baking powder, and salt. Stir until well mixed.

Step 3

Add the melted unsalted butter, vanilla extract, and egg to the dry ingredients. Mix until a dough forms.

Step 4

Scoop out small portions of the dough, roughly a tablespoon each, and roll them into balls. Place the balls on the prepared baking sheet and flatten them gently with your hand or the back of a spoon.

Step 5

Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies start to turn golden brown.

Step 6

Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 7

Store the cookies in an airtight container at room temperature for up to one week.
