Ingredients

  • 4 units medium zucchini
  • 1 pound large shrimp, peeled and deveined

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons lemon juice
  • 0.5 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Using a spiralizer, slice the zucchinis into noodle-like strands and set aside.

Step 2

Heat a tablespoon of olive oil in a large skillet over medium-high heat.

Add the shrimp to the skillet; season with salt and black pepper. Sauté the shrimp until pink and opaque, about 3 minutes on each side.
