Ingredients

  • 4 pounds Pork shoulder roast
  • 2 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Caraway seeds
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Dijon mustard
  • 2 cups Low sodium beef broth
  • 2 Celery stalks, chopped
  • 1 Carrot, chopped
  • 0.5 cup Heavy cream
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a small bowl, mix together the olive oil, minced garlic, onion powder, paprika, caraway seeds, salt, and black pepper.

Step 3

Rub the pork shoulder roast with the Dijon mustard and then with the spice mixture until well coated.

Step 4

Place the pork roast in a roasting pan or Dutch oven.

Step 5

Surround the pork with the chopped celery and carrot.

Step 6

Pour the beef broth into the pan, ensuring it covers the bottom without pouring over the top of the pork.

Step 7

Cover the roasting pan or Dutch oven with a lid or foil.

Step 8

Roast in the preheated oven for about 2 hours and 30 minutes.

Step 9

After this time, uncover and continue to roast for an additional 30 minutes or until the pork is nicely browned and the internal temperature reaches around 145°F (63°C).

Step 10

Remove the pork from the oven and transfer it to a cutting board. Let it rest for 10-15 minutes before slicing.

Step 11

While the pork is resting, place the roasting pan with the vegetables and juices on the stovetop over medium heat.

Step 12

Add butter and heavy cream to the pan, stirring to combine and reduce the sauce slightly, about 5 minutes.

Step 13

Strain the sauce into a gravy boat, discarding the solids, or serve as is with the vegetables for added texture.

Step 14

Serve the sliced roast pork with the low carb gravy on the side.
