  • 400 g Cauliflower florets
  • 100 g Almond flour
  • 1 large Egg
  • 0.5 tsp Xanthan gum
  • 0.5 tsp Salt
  • 0.25 tsp Nutmeg
  • 0.25 tsp Black pepper
  • 30 g Butter
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Begin by steaming the cauliflower florets until they are very tender, approximately 8-10 minutes. Drain well and allow them to cool slightly.

Step 2

Transfer the cooled cauliflower to a food processor and pulse until you achieve a smooth puree. Ensure there is no excess moisture; you may need to strain it through a clean kitchen towel or cheesecloth.

Step 3

In a large mixing bowl, combine the cauliflower puree with almond flour, egg, xanthan gum, salt, nutmeg, and black pepper. Mix thoroughly until a dough forms.

Step 4

Split the dough into four equal parts. On a surface dusted lightly with almond flour, roll each piece into a log approximately 1cm in diameter. Cut each log into 2-3cm pieces, shaping them into small tapered logs.
