Ingredients

  • 150 g Almond flour
  • 50 g Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 100 g Erythritol sweetener
  • 120 g Unsalted butter
  • 4 large Eggs
  • 1 teaspoon Vanilla extract
  • 120 ml Heavy cream
  • 100 g Dark chocolate (70% cocoa or higher), chopped

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Step 2

In a medium bowl, combine the almond flour, cocoa powder, baking powder, and salt. Whisk until well blended.

Step 3

In a large mixing bowl, cream together the erythritol sweetener and softened butter using an electric mixer until the mixture is light and fluffy.

Step 4

Add in the eggs, one at a time, beating well after each addition until the mixture is smooth and creamy.

Step 5

Mix in the vanilla extract.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until thoroughly combined.

Step 7

In a small saucepan, heat the heavy cream over low heat until it just begins to simmer. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.

Step 8

Pour the melted chocolate mixture into the cake batter and fold gently until well incorporated.

Step 9

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 10

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 11

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Step 12

Optional: Serve with a dollop of whipped cream or a sprinkle of cocoa powder for extra decadence.
