  • 0.5 cup Unsalted butter, room temperature
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 0.5 cup Dark chocolate chips (sugar-free)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium-sized bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.

In a large bowl, using an electric mixer, beat the butter and erythritol until it's creamy and well combined.

Step 4

Add in the vanilla extract and eggs, and continue to beat until the mixture is smooth.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.

Step 6

Fold in the dark chocolate chips into the dough using a spatula or wooden spoon.

Step 7

Scoop approximately tablespoon-sized amounts of dough and place them onto the prepared baking sheets, leaving a little space between each cookie.

Step 8

Gently press down on each cookie ball to flatten slightly.

Step 9

Bake in the preheated oven for about 10-12 minutes or until the edges of the cookies are set.

Step 10

Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
