Ingredients

  • 1.5 cups almond flour
  • 2 tablespoons cream cheese
  • 2 cups shredded mozzarella cheese
  • 1 large egg
  • 1 teaspoon baking powder
  • 6 slices deli ham
  • 3 tablespoons cream cheese (for filling)
  • 1 tablespoon Dijon mustard
  • 1 egg yolk
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the cream cheese and shredded mozzarella cheese. Microwave in 30-second intervals, stirring in between, until the cheese is melted and well combined.

Step 3

Add the almond flour, egg, and baking powder to the cheese mixture. Stir until a dough forms. If the mixture is sticky, knead with your hands until it becomes pliable.

Step 4

Roll the dough out between two sheets of parchment paper to form a large rectangle, about 1/4 inch thick.

Step 5

Cut the rectangle into 6 smaller squares.

Step 6

In a small bowl, mix the cream cheese (for filling) with Dijon mustard.

Step 7

Place a slice of ham and a spoonful of the cream cheese mixture on each square of dough.

Step 8

Roll each dough piece around the filling, starting from a corner to form a triangle or croissant shape.

Step 9

Transfer the rolled Schinkengipfel to the prepared baking sheet.

Step 10

In another small bowl, mix the egg yolk with water to create an egg wash. Brush the tops of the Schinkengipfel with the egg wash.

Step 11

Bake in the preheated oven for 20-25 minutes, or until golden brown and firm to touch.

Step 12

Allow to cool slightly before serving. Enjoy warm or at room temperature.
