Ingredients

  • 15 Dried red chillies
  • 1 cup Water
  • 2 tablespoons Oil (preferably sesame or olive oil)
  • 10 cloves Minced garlic
  • 2 tablespoons Minced ginger
  • 2 tablespoons Soy sauce (low sodium)
  • 2 tablespoons Vinegar
  • 0.5 teaspoons Salt
  • 1 teaspoon Erythritol
  • 0.25 teaspoons White pepper

Directions

Step 1

Soak the dried red chillies in 1 cup of hot water for 20 minutes to soften them.

Step 2

Drain the soaked chillies and reserve the soaking water. Add the chillies to a blender with a few tablespoons of reserved water and blend into a smooth paste. Add more water as needed to reach a smooth consistency.

Step 3

Heat oil in a saucepan over medium heat. Add the minced garlic and ginger, and sauté for about 2 minutes until fragrant and slightly golden.

Step 4

Add the chilli paste to the saucepan and cook for about 5 minutes, stirring frequently to prevent sticking.

Step 5

Stir in the soy sauce, vinegar, salt, erythritol, and white pepper. Mix well and let it simmer for another 5 minutes while stirring occasionally.

Step 6

Taste and adjust the seasoning as needed. If you desire more sweetness, add a touch more erythritol.

Step 7

Let the sauce cool to room temperature before transferring it to an airtight container.

Step 8

Store in the refrigerator for up to 2 weeks. Stir well before using.
