Ingredients

  • 500 grams Ground Beef
  • 1 medium Zucchini
  • 1 medium Red Bell Pepper
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 large Egg
  • 60 grams Almond Flour
  • 50 grams Parmesan Cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Italian Seasoning
  • 2 tablespoons Olive Oil

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out the excess moisture from the zucchini and set it aside.

Step 3

Finely chop the red bell pepper and onion. Mince the garlic cloves.

Step 4

In a large mixing bowl, combine the ground beef, squeezed zucchini, chopped red bell pepper, onion, minced garlic, and egg.

Step 5

Add the almond flour, grated Parmesan cheese, salt, pepper, and Italian seasoning to the bowl. Mix all the ingredients together until well combined.

Step 6

Shape the mixture into approximately 16 meatballs of equal size and place them on the prepared baking sheet.

Step 7

Drizzle the olive oil over the meatballs to help them brown during the baking process.

Step 8

Bake in the preheated oven for about 20-25 minutes, or until the meatballs are cooked through and golden brown.

Step 9

Remove the meatballs from the oven and let them rest for a few minutes before serving.

Step 10

Serve warm with a low-carb dipping sauce or alongside a fresh salad.
