Ingredients

  • 2 medium acorn squash
  • 3 tablespoons olive oil
  • 1 teaspoon salt

  • 1 pound ground turkey
  • 1 small onion
  • 2 cloves garlic clove
  • 1 medium bell pepper
  • 4 ounces mushrooms
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 0.25 teaspoon red pepper flakes
  • 0.5 cup parmesan cheese
  • 3 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Cut the acorn squashes in half horizontally and scoop out the seeds using a spoon.

Brush the cut sides of the squashes with 2 tablespoons of olive oil and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of ground black pepper.

Place the squash halves cut side down on a baking sheet and roast in the preheated oven for 30 minutes until tender.
