Ingredients

  • 150 grams Brown Lentils
  • 2 tablespoons Olive Oil
  • 1 medium, finely chopped Red Onion
  • 2 minced Garlic Cloves
  • 1 medium, grated Carrot
  • 1 large Egg
  • 50 grams Almond Flour
  • 1 teaspoon Ground Cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons, chopped Fresh Parsley
  • 2 tablespoons (for frying) Coconut Oil

Directions

Step 1

Rinse the brown lentils under cold water. Place them in a pot with double the amount of water and bring to a boil. Reduce the heat and simmer for about 15-20 minutes until tender. Drain and set aside to cool slightly.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped red onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic and grated carrot to the skillet with the onions. Cook for another 3 minutes until the carrots are slightly softened.

Step 4

In a large mixing bowl, combine the cooked lentils, sautéed vegetables, egg, almond flour, ground cumin, paprika, salt, black pepper, and chopped fresh parsley. Mix well until all ingredients are combined and hold together.

Divide the mixture into 8 equal portions and shape each portion into a patty.

In the same skillet, heat the coconut oil over medium-high heat. Fry the patties in batches, if necessary, for about 3-4 minutes on each side or until golden brown and crisp.
