Ingredients

  • 1.5 pounds Ground lamb
  • 0.25 cup Almond flour
  • 1 large Egg
  • 3 cloves Garlic
  • 0.5 medium Onion
  • 0.25 cup Fresh parsley
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Mince the garlic and finely chop the onion and parsley.

Step 3

In a large bowl, combine the ground lamb, almond flour, egg, minced garlic, chopped onion, parsley, cumin, coriander, smoked paprika, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

Step 4

Form the mixture into approximately 20 meatballs, each about 1 inch in diameter.

Step 5

Heat the olive oil in a large skillet over medium heat.

Step 6

Add the meatballs to the skillet in batches, ensuring not to overcrowd. Sear the meatballs on all sides until they are browned, about 6-7 minutes total.

Step 7

Transfer the seared meatballs to a baking sheet lined with parchment paper.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the meatballs are cooked through.

Step 9

Remove from the oven and let them rest for a couple of minutes before serving.

Step 10

Serve the meatballs hot as an appetizer or with a side salad for a main dish.
