Ingredients

  • 1 15 oz can canned chickpeas
  • 0.5 cup almond flour
  • 0.25 cup chopped fresh parsley
  • 1 small onion, finely chopped
  • 1 large egg
  • 2 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Drain and rinse the canned chickpeas thoroughly under cold water.

Step 2

In a large mixing bowl, mash the chickpeas with a potato masher or a fork until they form a rough paste.

Step 3

Add almond flour, chopped parsley, finely chopped onion, egg, minced garlic, ground cumin, ground coriander, lemon juice, salt, and black pepper to the mashed chickpeas.

Step 4

Mix the ingredients thoroughly until well combined. The mixture should be firm enough to hold together; if too wet, add a little more almond flour.

Step 5

Shape the mixture into small patties, approximately 2 inches in diameter.

Step 6

Heat olive oil in a large skillet over medium heat.

Step 7

Once the oil is hot, carefully place the patties in the skillet. Do not overcrowd; cook in batches if necessary.

Step 8

Cook each side for about 4-5 minutes until golden brown and crisp.

Step 9

Transfer the cooked patties to a plate lined with paper towels to absorb excess oil.

Step 10

Serve warm as a main dish or a snack, paired with your choice of dipping sauce or salad.
