Ingredients

  • 2 cups Almond flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 0.25 cup Unsalted butter, melted
  • 1 teaspoon Apple cider vinegar
  • 2 medium Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Black pepper
  • 4 Lettuce leaves
  • 1 medium Tomato, sliced
  • 4 tablespoons Mayonnaise
  • 4 slices Cheddar cheese, sliced

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the almond flour, baking powder, and salt.

Step 3

In another bowl, beat the eggs, then add the melted butter and apple cider vinegar.

Step 4

Combine the wet and dry ingredients and mix until a dough forms.

Step 5

Divide the dough in half, mold each half into a baguette shape on the prepared baking sheet.

Step 6

Bake for 25-30 minutes until golden brown and firm to the touch. Let them cool on a wire rack.

Step 7

While the bread is baking, cook the chicken. Heat olive oil in a skillet over medium heat.

Step 8

Season the chicken breasts with garlic powder, onion powder, and black pepper.

Step 9

Cook the chicken breasts for about 6-7 minutes on each side, until fully cooked through.

Step 10

Remove from heat and let them rest for 5 minutes before slicing them thinly.

Step 11

Once the bread has cooled, slice it lengthwise, being careful not to cut all the way through.

Step 12

Spread 1 tablespoon of mayonnaise on each side of the baguette.

Step 13

Layer each baguette with lettuce, sliced chicken, tomato slices, and cheddar cheese.

Step 14

Close the baguette, slice in half, and serve immediately for a fresh and satisfying low-carb meal.
