Ingredients

  • 2 pieces Low carb tortillas
  • 3 pieces Large eggs
  • 1 cup Cheddar cheese, shredded
  • 1 cup Fresh spinach, chopped
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Cooked bacon, crumbled
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

In a medium bowl, beat the eggs with salt and black pepper until well combined.

Step 2

Heat butter in a non-stick skillet over medium heat. Once melted, pour the beaten eggs into the skillet.

Gently scramble the eggs until they are mostly cooked through but still slightly runny, then add the chopped spinach and diced red bell pepper. Continue to cook for another minute until the spinach wilts and the eggs are fully cooked. Remove from heat.

Lay one tortilla flat on a clean cutting board. Spread half of the scrambled egg mixture over one half of the tortilla.
