Ingredients

  • 1 pound ground beef
  • 1 cauliflower (medium head, grated into rice-sized pieces)
  • 0.25 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 3 green onions, chopped
  • 1 red bell pepper, diced
  • 2 carrots, julienned
  • 0.5 teaspoon red chili flakes (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon sesame seeds

Directions

Step 1

Start by prepping your vegetables: Grate the cauliflower into rice-sized pieces and set aside. Chop the green onions, dice the red bell pepper, julienne the carrots, and mince the garlic.

Step 2

In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. This should take about 6-8 minutes. Once cooked, remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, stirring frequently until fragrant, about 1-2 minutes. Add the diced red bell pepper and julienned carrots, cooking for 3-4 minutes until they start to soften.

Step 4

Add the grated cauliflower 'rice' to the skillet, stirring well to combine. Cook for another 3-5 minutes, or until the cauliflower begins to soften and take on a rice-like texture.

Step 5

Return the cooked beef to the skillet and add the soy sauce (or tamari), stirring to ensure everything is well combined. Season with salt, black pepper, and red chili flakes (if using).

Step 6

Allow the mixture to cook for an additional 2-3 minutes to let the flavors meld, stirring occasionally.

Step 7

Remove the skillet from heat and stir in the chopped green onions.

Step 8

Divide the beef and cauliflower rice mixture among four bowls. Sprinkle with sesame seeds for garnish before serving.

Step 9

Enjoy your low carb savory beef and rice bowl hot and fresh!
