Ingredients

  • 1 pound ground beef (85% lean)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 4 cups cauliflower, riced
  • 2 tablespoons soy sauce
  • 1 tablespoon worcestershire sauce
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 2 stalks green onions, sliced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and garlic to the skillet and sauté for 3-4 minutes until the onion becomes translucent.

Step 3

Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned, about 6-8 minutes.

Step 4

Once the beef is mostly cooked, stir in the diced red bell pepper and cook for an additional 3 minutes to soften the pepper.

Step 5

Add the riced cauliflower to the skillet, stirring to combine with the beef mixture.

Step 6

In a small bowl, mix together the soy sauce, worcestershire sauce, ground black pepper, and salt. Pour this over the beef and cauliflower mixture.

Step 7

Continue cooking for about 5-7 minutes, stirring occasionally, until the cauliflower is tender yet still slightly crisp.

Step 8

Remove the skillet from the heat and sprinkle with sliced green onions and chopped fresh parsley to garnish before serving.

Step 9

Serve hot and enjoy this low-carb take on a comforting classic.
