Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for about 1 minute or until the cheeses are melted and smooth. Stir well to combine.
In a separate large bowl, mix together almond flour and baking powder. Add the melted cheese mixture and the egg to the bowl.
Use your hands or a spatula to knead and mix the ingredients vigorously until they form a cohesive dough. It will be sticky at first, but keep kneading until well combined and smooth.
