Ingredients

  • 1.5 cups almond flour
  • 2 cups shredded mozzarella cheese
  • 3 tablespoons cream cheese
  • 1 teaspoon baking powder
  • 4 large eggs
  • 4 breakfast sausage patties
  • 4 cheddar cheese slices
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 1 minute or until the cheese is melted.

Step 3

Stir the melted cheese mixture thoroughly, then add the almond flour and baking powder. Crack in 2 of the eggs and mix until a dough forms.

Step 4

Place the dough on a piece of parchment paper and knead it a few times to ensure all ingredients are well combined.

Step 5

Roll out the dough into a rectangle about 1/4 inch thick.

Step 6

Cut the dough into 4 equal squares and place them onto the prepared baking sheet.

Step 7

In a skillet over medium heat, cook the sausage patties until they're browned and fully cooked. Remove from the skillet and set aside.

Step 8

In the same skillet, melt 1 tablespoon of butter and scramble the remaining 2 eggs, seasoning with salt and pepper to taste. Cook until just set, then remove from heat.

Step 9

Place a sausage patty on each square of dough, followed by a portion of scrambled eggs and a slice of cheddar cheese.

Step 10

Fold the corners of the dough over the filling to form a croissant shape.

Step 11

Brush the tops with the remaining melted butter.

Step 12

Bake in the preheated oven for 15-18 minutes, or until the croissants are golden brown and cooked through.

Step 13

Let them cool slightly before serving. Enjoy your low-carb breakfast croissants warm!
