Ingredients

  • 1 pound Chicken breast
  • 0.25 cup Coconut aminos
  • 0.5 cup Coconut milk
  • 2 tablespoons Lime juice
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 12 pieces Bamboo skewers
  • 1 tablespoon Olive oil

Directions

Step 1

Soak bamboo skewers in water for at least 20 minutes to prevent burning.

Step 2

Cut the chicken breast into 1-inch cubes and set aside.

Step 3

In a large mixing bowl, combine coconut aminos, coconut milk, lime juice, minced garlic, grated ginger, ground coriander, ground cumin, turmeric powder, red pepper flakes, salt, and black pepper.

Step 4

Add the cubed chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.

Step 5

Preheat the grill to medium-high heat.

Step 6

Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving some space between each piece for even cooking.

Step 7

Lightly brush the grill grates with olive oil to prevent sticking.

Step 8

Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

Step 9

Remove from the grill and let rest for a few minutes before serving.

Step 10

Serve hot, garnished with fresh lime wedges and cilantro if desired.
