Ingredients

  • 15 oz canned salmon
  • 1 large egg
  • 0.5 cup almond flour
  • 0.25 cup chopped green onion
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon lemon zest
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Open the canned salmon and drain well. Transfer the salmon into a mixing bowl. Use a fork to break the salmon into smaller flakes.

Step 2

Add the egg, almond flour, chopped green onion, parsley, minced garlic, lemon zest, Dijon mustard, salt, and black pepper to the salmon in the bowl.

Step 3

Mix all the ingredients thoroughly until they are well combined.

Step 4

Divide the mixture into four equal portions and shape them into round patties, about 1 inch thick.

Step 5

Heat the olive oil in a large non-stick skillet over medium heat.

Step 6

Once the oil is hot, carefully place the salmon patties in the skillet.

Step 7

Cook the patties for about 4-5 minutes on each side or until they are golden brown and crispy.

Step 8

Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

Step 9

Serve the salmon patties warm with a side of mixed greens or your choice of low-carb salad.
