Ingredients

  • 2 pieces salmon fillets
  • 200 grams almond flour
  • 50 grams coconut flour
  • 100 grams cream cheese
  • 50 grams butter
  • 1 large egg
  • 100 grams spinach leaves
  • 2 cloves garlic cloves, minced
  • 1 egg yolk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon dill, chopped
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

In a bowl, mix together almond flour, coconut flour, and salt.

Step 3

Melt the butter in a small pan, then add it to the flour mixture along with the cream cheese and egg. Mix until a dough forms.

Step 4

Wrap the dough in plastic wrap and refrigerate for about 15 minutes while you prepare the filling.

Step 5

Sauté the spinach and minced garlic in a little butter until wilted. Add a pinch of salt and pepper, and remove from heat.

Step 6

Roll out the chilled dough between two sheets of parchment paper to about 0.5 cm thickness, making sure it is large enough to envelop the salmon fillets completely.

Step 7

Place the salmon fillets on the rolled-out dough. Season them with a pinch of salt, black pepper, and dill. Top each fillet with sautéed spinach.

Step 8

Sprinkle lemon zest over the spinach and then fold the dough over the salmon, sealing the edges by pinching them together.

Step 9

Beat the egg yolk and brush over the pastry to give it a nice golden color when baked.

Step 10

Transfer the wrapped salmon onto the prepared baking sheet.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the salmon is cooked through.

Step 12

Allow to cool for a few minutes before serving.
