Ingredients

  • 14.75 oz canned salmon
  • 0.5 cup almond flour
  • 2 pcs large eggs
  • 2 stalks green onions, finely chopped
  • 2 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 tbsp olive oil
  • 1 whole lemon wedges

Directions

Step 1

Drain the canned salmon and remove any large bones and skin. Flake the salmon into a large mixing bowl.

Step 2

Add the almond flour, eggs, chopped green onions, dill, lemon zest, garlic powder, cayenne pepper, salt, and black pepper to the bowl with the salmon.

Step 3

Mix all the ingredients together using a fork or your hands until well combined.

Step 4

Shape the mixture into 8 small patties, each about 2 inches in diameter.

Step 5

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 6

Once the oil is hot, add half of the salmon patties to the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

Step 7

Remove the cooked croquettes from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Step 8

Add the remaining 2 tablespoons of olive oil to the skillet and repeat the cooking process with the remaining patties.

Step 9

Serve the salmon croquettes warm, garnished with lemon wedges for squeezing over the top.
