  • 1 medium head Cauliflower
  • 0.5 cup Peanuts
  • 1 teaspoon Cumin seeds
  • 2 Green chilies
  • 8 Curry leaves
  • 2 tablespoons Ghee or coconut oil
  • 1 teaspoon Himalayan pink salt or regular salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh coriander leaves
  • 2 tablespoons Roasted peanuts

Directions

Step 1

Begin by preparing the cauliflower rice: Wash and chop the cauliflower into florets. Using a food processor, pulse the florets until they reach a rice-like consistency. Be careful not to over-process as it can turn mushy.

Step 2

Dry roast the peanuts in a pan on medium heat until they are golden brown. Remove the skin by rubbing them in a kitchen towel. Set aside half of these peanuts to grind coarsely.

Step 3

In a large pan, heat ghee or coconut oil over medium heat. Add cumin seeds and allow them to splutter.

Add green chilies (finely chopped) and curry leaves to the pan. Sauté for a minute to combine the flavors.

Add the cauliflower rice to the pan. Stir well to mix with the spices.
