Ingredients

  • 8 oz Low-carb rotini pasta
  • 2 tablespoons Extra virgin olive oil
  • 2 Garlic cloves, minced
  • 1 Yellow onion, diced
  • 28 oz Canned crushed tomatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.25 teaspoon Red pepper flakes (optional)
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons Fresh basil leaves, chopped

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat. Once boiling, add the low-carb rotini pasta and cook according to package instructions until al dente, approximately 7-9 minutes. Drain and set aside.

Step 2

While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat. Add the minced garlic and diced onion. Sauté for about 3-4 minutes, until the onion becomes translucent.

Step 3

Stir in the crushed tomatoes, salt, black pepper, dried basil, dried oregano, and red pepper flakes (if using). Bring the sauce to a simmer, reduce the heat to low, and let it cook for about 15-20 minutes, allowing the flavors to meld.

Step 4

After the sauce has simmered, taste and adjust seasoning if necessary.

Step 5

Add the cooked low-carb rotini pasta to the skillet and gently toss to coat the pasta evenly with the tomato sauce.

Step 6

Serve hot, garnished with grated Parmesan cheese and freshly chopped basil leaves for added flavor and aroma.
