Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 units Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Red onion, cut into chunks
  • 1 medium Green bell pepper, cut into chunks
  • 1 cup Cherry tomatoes
  • 8 units Wooden or metal skewers

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and place them in a large mixing bowl.

Step 2

In a small bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, dried oregano, salt, and pepper. Mix well to create a marinade.

Step 3

Pour the marinade over the chicken cubes, ensuring they are well-coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour or up to 4 hours for more flavor.

Step 4

Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.

Step 5

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 6

Thread the marinated chicken cubes onto the skewers, alternating with chunks of red onion, green bell pepper, and cherry tomatoes.

Step 7

Place the skewers on the prepared baking sheet and roast in the preheated oven for 20-25 minutes. Turn the skewers halfway through to ensure even cooking, until the chicken is cooked through and slightly charred on the edges.

Step 8

Once cooked, remove the kebabs from the oven and let them rest for a few minutes. Serve hot with a side salad or a low carb dipping sauce of your choice.
