Ingredients

  • 1 medium head Cauliflower
  • 1 cup Carrots
  • 0.75 cup Frozen Peas
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 0.5 medium Onion
  • 2 tablespoons Soy Sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Directions

Step 1

Remove the outer leaves and core of the cauliflower head, then cut it into large florets.

Step 2

Place the cauliflower florets in a food processor and pulse until they resemble rice or couscous. Work in batches if necessary.

Peel and dice the carrots into small cubes. Mince the garlic cloves and chop half of the onion into small pieces.

In a large skillet, heat the olive oil over medium heat.
