Ingredients

  • 4 cups Watermelon
  • 1 cup Feta cheese
  • 0.25 cup Fresh mint leaves
  • 1 whole Lime
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the watermelon. Cut a seedless watermelon into cubes, measuring about 4 cups. Place the cubes in a large mixing bowl.

Step 2

Crumble 1 cup of feta cheese and add it to the bowl with the watermelon cubes.

Step 3

Gently wash and dry the fresh mint leaves. Tear or chop about 0.25 cup of mint leaves into small pieces and add them to the bowl.

Step 4

Prepare the lime dressing. Roll a lime on your kitchen counter to soften it, then cut it in half. Squeeze the juice from the lime into a small bowl.

Step 5

Add 2 tablespoons of olive oil to the lime juice, and mix well with a fork or whisk until emulsified.

Step 6

Sprinkle 0.5 teaspoon of salt and 0.25 teaspoon of black pepper into the lime and olive oil mixture, and stir to combine.

Step 7

Drizzle the dressing over the watermelon, feta, and mint mixture in the large mixing bowl.

Step 8

Gently toss the salad using salad tongs or two spoons, being careful not to crush the watermelon cubes.

Step 9

Once the salad is well coated with the dressing, taste and adjust the seasoning if necessary.

Step 10

Transfer the salad to a serving dish and garnish with additional mint leaves if desired.

Step 11

Serve immediately, or cover and refrigerate for up to 2 hours before serving.
