Ingredients

  • 6 whole Lemons
  • 1 cup Freshly squeezed lemon juice
  • 1 cup Raspberry puree (strained)
  • 4 cups Cold water
  • 1 cup Erythritol or other low-carb sweetener
  • 2 cups Ice cubes
  • 4 slices Lemon slices (for garnish)
  • 10 whole Fresh raspberries (for garnish)

Directions

Step 1

Begin by cutting each lemon in half and juicing them to obtain approximately 1 cup of freshly squeezed lemon juice.

Step 2

Prepare the raspberry puree by blending fresh or thawed frozen raspberries in a blender. Strain the puree through a fine mesh sieve to remove seeds, resulting in 1 cup of smooth raspberry puree.

Step 3

In a large pitcher, combine the freshly squeezed lemon juice, strained raspberry puree, and cold water.

Step 4

Add the erythritol or your chosen low-carb sweetener to the mix, stirring well until it is completely dissolved. Adjust the sweetness to your preference, adding more sweetener if necessary.

Step 5

Add ice cubes to the pitcher and stir to chill the lemonade.

Step 6

For serving, pour the pink lemonade into glasses filled with ice. Garnish each glass with a lemon slice and a couple of fresh raspberries.

Step 7

Serve immediately and enjoy your refreshing low-carb pink lemonade.
