Ingredients

  • 100 grams Fresh strawberries
  • 100 grams Fresh raspberries
  • 50 grams Fresh blueberries
  • 200 milliliters Unsweetened almond milk
  • 1 tablespoon Erythritol sweetener (optional)
  • 2 tablespoons Lemon juice
  • 1 teaspoon Vanilla extract

Directions

Step 1

Wash all the berries thoroughly under running water and pat them dry with a clean kitchen towel.

Step 2

Hull the strawberries and chop them into quarters.

Step 3

In a blender, add the strawberries, raspberries, blueberries, almond milk, lemon juice, and vanilla extract.

Step 4

Blend the mixture on high speed until smooth. Taste the mixture, and if desired, add erythritol to sweeten, blending again briefly.

Step 5

Using a sieve, strain the mixture over a bowl or a large measuring cup to remove seeds and ensure a smooth popsicle texture.

Pour the strained mixture into popsicle molds, leaving a little space at the top for expansion.

If your popsicle mold does not have a lid with built-in sticks, cover the top with foil and insert popsicle sticks about three-quarters of the way down into each mold.
