Ingredients

  • 1 cup Pearled barley
  • 8 cups Water
  • 4 slices Lemon slices
  • 1 inch piece Fresh ginger root
  • 2 tablespoons Stevia
  • 8 leaves Mint leaves
  • 2 cups Ice cubes

Directions

Step 1

Begin by rinsing the pearled barley under cold water in a fine mesh sieve to remove any excess starch and impurities.

Step 2

In a large pot, combine the rinsed barley and 8 cups of water. Bring the mixture to a boil over medium-high heat.

Step 3

While the water is heating, peel the ginger root and slice it thinly. Add the ginger slices to the boiling water.

Step 4

Reduce the heat to low, allowing the barley and ginger to simmer gently for 45 minutes. Stir occasionally to prevent the barley from sticking to the bottom of the pot.

Once the barley is cooked and has released its nutrients into the water, remove the pot from the heat and let it cool for about 10 minutes.
