Ingredients

  • 50 grams pearl barley
  • 1.5 liters water
  • 10 leaves fresh mint leaves
  • 4 tablespoons lemon juice
  • 2 tablespoons stevia or monk fruit sweetener
  • 1 teaspoon lemon zest
  • 10 ice cubes
  • 4 slices lemon slices

Directions

Step 1

Rinse the pearl barley under cold running water to remove any excess starch and impurities. Drain well.

Step 2

In a medium saucepan, combine the rinsed barley and 1.5 liters of water. Bring to a boil over high heat.

Step 3

Reduce the heat to medium-low and let it simmer for about 30 minutes or until the barley is tender.

Step 4

Remove the saucepan from the heat and strain the barley water through a fine-mesh sieve into a large jug, discarding the cooked barley or saving it for another use.

Step 5

Allow the barley water to cool slightly to room temperature.

Step 6

Add the fresh mint leaves, lemon juice, stevia or monk fruit sweetener, and lemon zest to the barley water. Stir well to combine all the flavors.
