Ingredients

  • 3 medium fresh red beets
  • 2 tablespoons olive oil
  • 4 ounces cream cheese
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh dill
  • 2 tablespoons Greek yogurt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and trim the stem and root ends of the beets. Wrap each beet in aluminum foil and place on a baking sheet.

Step 3

Roast the beets in the preheated oven for 35-40 minutes, or until they are fork-tender.

Step 4

Remove the beets from the oven and let them cool completely. Once cooled, peel the skins off the beets and cut them into chunks.

Step 5

In a food processor, combine the beet chunks, olive oil, cream cheese, garlic, lemon juice, salt, black pepper, and Greek yogurt.
