Ingredients

  • 2 large Zucchini
  • 1 cup Ricotta cheese
  • 0.5 cup Parmesan cheese
  • 1 large Egg
  • 5 Fresh basil leaves
  • 1 teaspoon Salt

  • 2 tablespoons Olive oil
  • 3 Garlic cloves
  • 1 cup Heavy cream
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Parsley

Directions

Step 1

Using a vegetable peeler, slice the zucchini into long, thin strips. Aim for 20-24 strips in total.

In a bowl, combine ricotta cheese, half of the Parmesan cheese, the egg, chopped basil leaves, salt, and pepper. Mix well to combine.

Place two zucchini strips perpendicular to each other (forming a cross) on a flat surface. Add about a tablespoon of the ricotta mixture to the center.
