Ingredients

  • 300 g fresh raspberries
  • 50 g granulated erythritol
  • 240 ml heavy cream
  • 1 tablespoon unsweetened gelatin powder
  • 2 tablespoons cold water
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Directions

Step 1

In a small bowl, sprinkle the unsweetened gelatin powder over the cold water and let it sit for about 5 minutes to bloom.

Step 2

Place the raspberries in a blender or food processor and puree until smooth. Pass the puree through a fine sieve to remove the seeds and discard the seeds.

Step 3

In a medium saucepan over medium heat, combine the raspberry puree, granulated erythritol, and lemon juice. Stir until the erythritol is completely dissolved, then remove from heat.

Step 4

Add the bloomed gelatin to the warm raspberry mixture and stir until completely dissolved. Allow the mixture to cool to room temperature.

Step 5

In a separate bowl, beat the heavy cream with a hand mixer or stand mixer on medium speed until soft peaks form.

Step 6

Gently fold the cooled raspberry mixture into the whipped cream, ensuring not to deflate the cream. Add the vanilla extract and fold until well combined.

Step 7

Pour the mousse into individual ramekins or dessert glasses. Cover and refrigerate for at least 2 hours or until set.

Step 8

Before serving, garnish with a few fresh raspberries or a sprig of mint, if desired.
