Ingredients

  • 1 cup fresh raspberries
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon erythritol or your preferred low-carb sweetener
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the fresh raspberries thoroughly under cold water and pat them dry with a paper towel.

Step 2

Place the raspberries into a blender or food processor and blend until smooth.

Step 3

Strain the blended raspberries through a fine-mesh sieve into a mixing bowl to remove seeds, pressing the pulp with a spatula to extract as much juice as possible.

Step 4

Discard the seeds and any remaining pulp left in the sieve.

Step 5

To the seedless raspberry puree in the mixing bowl, add the apple cider vinegar, olive oil, lemon juice, Dijon mustard, erythritol, salt, and black pepper.

Step 6

Whisk all the ingredients together until the dressing is well combined and emulsified.

Step 7

Taste and adjust seasoning as needed, adding more sweetener for a sweeter dressing or more vinegar for extra tang.

Step 8

Transfer the raspberry dressing to a glass jar or bottle with a tight-fitting lid and refrigerate for at least 30 minutes before serving to let the flavors meld.

Step 9

Shake well before each use and store in the refrigerator for up to 1 week.
