Ingredients

  • 1 cup Almond flour
  • 1 cup Full-fat ricotta cheese
  • 0.5 cup Erythritol
  • 0.5 teaspoon Cardamom powder
  • 0.5 teaspoon Baking powder
  • 10 pieces Saffron strands
  • 1 cup Heavy whipping cream
  • 2 cups Almond milk, unsweetened
  • 2 tablespoons Pistachios, chopped
  • 0.5 teaspoon Rose water

Directions

Step 1

Preheat your oven to 350°F (180°C) and lightly grease a baking tray.

Step 2

In a mixing bowl, combine almond flour, ricotta cheese, 2 tablespoons of erythritol, cardamom powder, and baking powder. Mix well until the dough is smooth and all ingredients are well incorporated.

Step 3

Form small, even-sized balls from the dough and slightly flatten them into patties to form the basic Ras Malai shape.

Step 4

Place the patties on the prepared baking tray and bake for 15-18 minutes until they are firm and slightly golden. Remove from the oven and allow to cool.

While the patties are baking, prepare the milk syrup (Ras): In a saucepan, warm the almond milk and heavy whipping cream over medium heat.

Add the remaining erythritol, saffron strands, and rose water to the saucepan. Stir continuously until the erythritol is fully dissolved and the mixture begins to reduce slightly; this should take about 10 minutes.

Once the patties have cooled slightly, carefully place them into the warm milk syrup and allow them to soak for about 10 minutes on low heat so they can absorb the flavors.

Step 8

Gently remove the Ras Malai from heat and let them cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.
