Ingredients

  • 2 cups Almond flour
  • 4 ounces Cream cheese
  • 2 cups Shredded mozzarella cheese
  • 2 tablespoons Unsalted butter
  • 1 large Egg
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 2 tablespoons Stevia or another low-carb sweetener
  • 0.25 cup Raisins
  • 2 tablespoons Heavy cream
  • 2 tablespoons Sliced almonds (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large microwave-safe bowl, combine the cream cheese and shredded mozzarella cheese.

Step 3

Microwave on high for 1 minute, then stir. Microwave for an additional 30 seconds or until the cheese is mostly melted and can be combined smoothly.

Stir in the almond flour, baking powder, egg, and vanilla extract until a dough forms.

Place the dough between two pieces of parchment paper and roll it out into a rectangle, about 1/4 inch thick.
