Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 2 large Eggs
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Almond flour
  • 2 cloves Minced garlic
  • 1 cup Chopped spinach
  • 0.25 cup Chopped fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Rinse the quinoa thoroughly under cold water. In a medium saucepan, combine the quinoa with water and bring to a boil over high heat.

Step 2

Once it reaches a boil, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is tender and has absorbed all the water.

Remove from heat and let it cool slightly.

In a large bowl, beat the eggs and then add the slightly cooled quinoa, grated Parmesan cheese, almond flour, minced garlic, chopped spinach, chopped parsley, salt, and black pepper. Mix until well combined.
